OVERVIEW OF HACCP
1. Why should we apply HACCP?
HACCP is an effective tool to ensure the quality of food safety and to proactively prevent the risk of contamination during food processing.
Food safety quality management is a required trend in the world with the following characteristics:
Management Object: Transfer from completed products into the manufacturing process.
Management method: Transfer from checking to certification and recognition.
Management expense: Transfer from product quality criteria to the conditions and factors affecting the manufacturing process.
Management Goals: Transfer from eliminating the defectives to preventing risk of errors in manufacturing process.
Meet the requirements of import markets: The World Trade Organization (WTO) requires member countries to apply HACCP system as a means of controlling food safety. The European Union, the United States and many other countries have defined that HACCP must be applied for imported products.
2. What is HACCP standard?
HACCP is abbreviated from words “Hazard Analysis and Critical Control Point System”, which means "Hazard analysis and Critical control Point system", or a system of key hazards analysis, identification and control in production and food processing".
HACCP is a quality management system based on hazards analysis and critical control points. It is an analysis tool to ensure food quality and safety.
HACCP includes the systematic assessment of all steps involved in the food production process, and identifies the key steps of food quality and safety. This tool allows centralized technical resources, expertise in the processing steps that affect decisions to secure food quality.
3. Who should apply HACCP?
- In some countries, HACCP is mandatory for all food producing and trading enterprises.
- In Vietnam, HACCP is mandatory for all high risk food producing and trading enterprises.
- High-risk food products include:
(1) Meat
(2) Milk and Milk Products,
(3) Eggs and egg products,
(4)Raw and Processed Seafood,
(5) Cream, Ice,
(6) Water,
(7) Functional foods, Support foods,
(8) Additives,
(9) Instant foods, foods from instant vegetables, from soy,
(10) Frozen Foods.
- This is the mandatory standard, focusing on quality management food safety.
- When enterprises develop and meet the HACCP standards, they will have a quality management system to create products to ensure food safety and quality services, and to meet the requirements of customers
- This is also a prerequisite for export-oriented enterprises.
