OVERVIEW OF ISO 22000: 2005
1. Why should we apply ISO 22000?
With the increasing demand and pressure from consumers, retailers require suppliers to prove the ability to adhere to food safety standards. Currently, there are a lot of food safety standards, in which the ISO 22000 standard is widely used in Vietnam.
The objective of ISO 22000 system is to support the foods processing enterprises to control hazards to ensure food safety from farming until the foods are used by the consumers.
When applying ISO 22000, enterprises must ensure the implementation of Prerequisite programs (GMP, SSOP...) to minimize the hazards for foods and a control system including: processes, control procedures, supporting documents systems... should be established
2. What is ISO 22000?
ISO 22000 is a standard established to focus on food safety by the International Standardization Organization (ISO). This standard is related to ISO 9000. Its full name is ISO 22000 Food safety management systems - Requirements for any organization in the food chain (food safety management system - Requirements for organizations in the food chain).
ISO 22000 is the accepted and valued standard in the world. A enterprise in the food supply chain that applies and achieves ISO 22000 certificate is recognized as a organization having good management system of food safety and ensuring supply of safe food products, quality for consumers.
3. Who should apply ISO 22000?
ISO 22000 can be applied in any organization that is involved directly or indirectly in the food chain including:
- The farms, fisheries and dairy farms.
- Meat, fish processing and animal feed producers, bread, cereals, beverages, frozen foods or canned producers.
- The food service providers such as: restaurants, fast food supply system, hospitals and hotels and mobile food vendor.
- The support services include storage and distribution of food and supply food processing equipment, additives, raw materials, cleaning and hygiene and packaging services.
- In short, a part or all of the requirements of ISO 22000 shall apply to any product come into contact with food sector or food chain.
